OUR HISTORY
For three generations now, the Sabaini family has handed down the culture and art of wine, carried on today by the owner Adolfo, his wife Mirca and their sons Riccardo and Alberto.
Cantina Sabaini has its roots in the past Great-grandfather Adolfo left the hills of Castagné to buy the first vineyard in the hamlet of Santa Giustina, in lllasi. At the time, the main activity was livestock farming and the vines occupied only a few rows.
The farm is born
From one generation to the next, grandfather Angelo, together with his wife Luigina, increased the surface area of the land to 30 hectares. It was at this time that the decision was made to definitively close down the breeding activity and to dedicate themselves exclusively to the world of wine.
Adolfo Sabaini joins the company
In the 1990s, his son Adolfo finished his agricultural studies and entered the company with a new, far-sighted mentality. A further turning point dates back to this period: the surface area of the land plots reaches 115 hectares.
The foundation stone of Cantina Sabaini
The decision to build the winery in Via Mormontea 6A in lllasi was made to meet the need to vinify all the grapes on the property. And so, from 2006 to 2021, Adolfo and his wife Mirca Rossetti dedicated themselves to vinifying grapes and selling the resulting wines to bottlers in Verona and beyond.

The new generation
Thanks to sons Riccardo and Alberto joining the company, the idea of the Sabaini brand in the world of the bottle was born. On 22 July 2022, the Cantina Sabaini Wine Shop is inaugurated, not only a sales outlet, but also a place to learn about the history and territory of the Val d'Illasi thanks to the Sabaini family's passion for their wine. There is also the launch of the new logo with an inverted S extrapolated from a painting by architect and artist Guido Pigozzi.


TERRITORY
115 hectares: a mosaic of soils, rows with different orientations and varying altitudes that make the final product unique.
We cultivate our vineyards in diverse settings, seeking to enhance the extraordinary potential of our land. Through the care of expert hands and thanks to careful observation of how the vines are transformed season after season, we respect and preserve the indigenous varieties of the Val d'Illasi in order to obtain quality wines.
Collina d'Illasi: white grape vineyards and red grape vineyards
Both vineyards are located in the village of Illasi, at an altitude of 175 metres, with both north-eastern and southern exposure. The soil, of medium alluvial texture, is characterised by the presence of skeleton favoured by the proximity of the Progno d'Illasi stream. The vines are trained using the traditional 'Pergola Veronese' system.Monte Castello d'Illasi
The vineyard takes its name from the Scaligero Castle that dominates the Val d'lllasi. Oriented on the north-east, south slopes of the mountain, it is favoured by excellent exposure and is subject to constant ventilation from the Lessini Mountains. The Pergola Veronese and Guyot training system is about 40 years old.
Monte Pistoza
This vineyard, which is about 30 years old, is located in the municipality of lllasi. It is located at an altitude of 250 metres and has an exposure ranging from north-east to south. The soil, of a calcareous-clayey nature enriched with skeleton and tuff, offers optimal conditions for the growth of the indigenous Corvina, Corvinone and Rondinella vines.
Monte Tomelon
This vineyard, with a history spanning some 20 years, stands majestically in the picturesque Val d'illasi, at an altitude of 460 metres, where the sun's rays embrace the vines from the north-east and south. Here, the soil, steeped in limestone and enriched with tuff and marl, provides a solid and fertile base for the growth of the grapes, cultivated with care and dedication following the Guyot training system.

Oasi Musella
The following vineyard is part of the prestigious Oasi Musella Estate, immersed in the picturesque natural park of San Martino Buon Albergo. Here, the long winemaking tradition is combined with an extraordinary wealth of biodiversity. Situated at an altitude between 50 and 100 metres, the vineyard enjoys north-east and south exposure, on soil characterised by a mixture of limestone and clay.
